Natural Spring Salt, Fleur de Sel Flakes

Fine flakes of hand-harvested fleur de sel, formed by slow evaporation across hot days with a little humidity in the air. Under a gentle southerly wind the flakes settle to the bottom of the salt pans and are lifted out carefully so they do not break.

The format suits sprinkling straight from the fingers, and the flakes dissolve easily, so they finish a dish with texture as well as seasoning. Good on fish, meat and foie.

Spring salt, hand-harvested. Particularly rich in potassium, calcium and magnesium.

6 oz (180g) in a paperboard box with a glass jar, or 18 oz (500g) in a large glass jar.
