Honey by the Jar

Single-varietal raw honey, jarred as it comes. Each harvest reflects the year's weather and whichever blossoms were in bloom, so once a varietal runs out it is gone for good. The tasting notes below come from staff tastings.

Beaver Creek Wildflower. Light amber. Floral with hints of pollen; the all-purpose one, good in tea or baking.

Beaver Creek Blackberry. Extra light amber. Smooth and rich, carrying the fruit of the blackberry blossom.

Buckwheat. Dark amber. Bold and molasses-like with a malty finish. In 20 oz jars only.

Cascadia Blackberry. Extra light amber. Smooth and fruity, from blackberries across the Willamette Valley.

Cascadia Wildflower. Light amber. Golden and velvety, with deep berry undertones and a touch of floral brightness.

Kings Valley Wildflower. Light amber. Fresh cereal aromas, ripe berries, herbal complexity and a soft minty finish.
